Easy Peasy Pizza

Last week I made homemade pizza for my family and me.  We had BBQ Chicken and Pepperoni.  It was so good.  And I had some pizza sauce and pepperoni left over, so the other day for lunch I made myself some "pizzas."  I came up with this...

Easy Peasy Pizza

2 tbsp. pizza sauce
10 slices pepperoni
2 slices of cheese (I used colby jack, but you can use whatever)
2 slices of bread
olive oil

 Turn on your broiler.  Ours has a high and low setting and I did this on high.

 Lay your bread in a pan and drizzle with a little olive oil just to help it crisp and give it some flavor.

 Toast for about 2 mins.

Spread sauce on each piece of bread.

 Layer on the pepperoni.

 Then add on the cheese.

 Then broil for another 2 mins or just until cheese is melted.

Deliciously paired with a Clementine Izze.  Mmm-mmm!

Cinnamon Bread from PW

The other day I decided I wanted to make bread. Who knows why. But I got it in my head and so I started the bread at about 7 pm. Well, needless to say it didn't get finished until the next day. The dough took 2 hrs to rise then it would take another 2 hrs to rise after putting the cinnamon and sugar inside. And, so I wrapped up the dough and waited till the next day. Well, our house is pretty cold so the dough didn't really rise like it was supposed to. But it still tasted delicious! And it did rise when I put the cinnamon sugar in and rolled it up and put it in the bread pan- like it was supposed to.




 After I made this first cut and pulled out a piece for my mom and grandma we discovered it was not completely cooked on the inside, so I had to put it back in (stupid oven).


 So, it got a little darker. My step-dad said it was burnt, what does he know?!


Mom enjoyed it either way :)

Joy's Vegan Pumpkin Walnut Bread

My manager, David, is a vegan.  Well, if you ask me, he's more of a vegetarian.  Anyway, every time I make a dessert and bring it to work he gets a little sad that it's not something he can really eat because it's not vegan.  So, I found this recipe for Vegan Walnut Pumpkin Bread from Joy the Baker and decided to make it for David.


Put all the dry ingredients together and give them a good whisk.



Mix all the wet ingredients together in a bowl.



Add the wet ingredients to the dry and give them a good mix.



Stir in most of the walnuts.  Then pour the batter into the pan then sprinkle the top with a little of the nuts.



I gave David the whole loaf on Saturday morning and when I asked him if he had eaten it all on Monday morning, he said he had almost finished it.


No, I'm not a suck up.  I just want to spread my baking-goodness to all my peeps.

Disappearing Banana Bread

I have to apologize for the fact that it seems to take me a while to post.  I sometimes will start a post and my computer will have a little...issue, I guess.  Then I get frustrated because it's late, so then I just go to bed.  And, yes, I will get busy and forget about my blog.  But the good news is that I return to you.  Don't worry, I can't forget about you.

We suddenly collected this increasing pile of old bananas in our kitchen.  So, what else am I gonna do but make banana bread, right?!

For a banana bread recipe where else can I turn, but the good old trusty Better Homes and Gardens Cookbook.


I had to double the recipe with all the bananas I had.



After heating up the oven, I grease the pan and I am super lazy,so it gets sprayed with canola oil :)



Mix all the dry ingredients and make a nice little well in the middle of the mix.  Another recipe that makes you use two different bowls.

The potato masher was quite handy for this part.



Mix all the wet ingredients with the bananas and the sugar.



Pour the wet ingredients into the middle of your dry ingredient well.



Give everything a good stir.  And a note to Better Homes and Gardens: When you make someone who just had surgery a couple weeks ago stir by hand it kind of hurts a little, well mostly the muscles I haven't used in a LONG time.



Pour the batter into your loaf pans.  Yes, one is the Mama and one is the Baby LOL



Now, it's streusel time.  Mix flour, brown suga, and butta (sorry couldn't help the southern twang comin' out)



Mash the sugar, flour, and butter together in a small bowl.



Then cover the top of your pre-baked bread with the struesel.  I had a lot so every inch was covered and I still had some left over.



Look at that!  Now, your kitchen smells like bananas.  Trust me this loaf will not last long.  Hence the name of this post.  The smaller pan I showed in the pictures above, The Chad took to work and the guys ate just about the whole pan.  Then the larger one stayed at home and lasted about two days.  It was amazing.  Especially, the struesel.  We all agreed that made the bread much better.


Don't forget I had to double the recipe.  So, when you make it according to the Better Homes and Gardens recipe it will probably make one large loaf.
