No Machine, No Rolling a Can Ice Cream

I follow this blog called Kevin and Amanda.  She is so cute and writes about cool stuff.  And she has great recipes.  I saw one last week that was ice cream made without an ice cream machine or rolling a can with rock salt on a sidewalk, like I used to do with my grandpa when I was a little kid.

Coffee with Peanut Toffee Crunch Ice Cream:


Tasty, tasty!



First, whip the heavy cream into submission.  For those of you without a mixer- I hope you have some muscles, but if you don't you will when you're done.



The mix-ins, of course I had to use some VIA for the coffee.  Jessie and I were walking through CVS and saw that Dove bar and couldn't pass it up.



While the cream was being whipped up, I added the VIA to about 1/3 cup of water.  It dissolves in cold or warm water.



Now, it will be submissive.  And it looks tasty, however it's not sweet.  Don't pull a Sarah and try it, expecting it to taste good hehe



Pour the sweetened condensed milk into a mixing bowl.



Add the coffee and give it a good stir.



Chop up the chocolate bar and sneak a couple pieces :)



Throw the chocolate into the coffee and sweetened condensed milk mixture.



Give it a good stir.  This is a very sweet mixture- if you are like me and taste it :)  I'm a big taste-tester and probably shouldn't be half the time.



Pour the sweet mixture into the whipped cream.



Fold everything together nice and gently.



After you pour the mixture into a container, place it in the freezer.  It takes about 24 hrs for it to be completely frozen.



Then you get this!  The whole thing lasted about 2 days in our house.  The ice cream is AMAZING!  It's kind of a mix between gelato and ice cream.

  1. I can vouch that this ice cream is absolutely amazing!!!! I don't even like ice cream that much but this has a great texture and flavor.
